Banana Berry ‘Nice’ Cream

I love a sweet frozen treat when it’s hot outside. I also love when that sweet treat doesn’t require any cooking and very little freeze time. And that’s why I’m sharing Banana Berry ‘Nice’ Cream with you today! Because it’s all of those things, and it’s been really, really hot outside.

If you haven’t heard of ‘nice’ cream, it’s a riff off traditional ice cream, but has no cream or added sugar or egg yolks. It’s just a frozen banana, a few cups of your favorite frozen fruit, a little bit of canned coconut milk solids (and a little honey, a pinch of salt and lemon juice, if you want) whirled together in a food processor or blender until smooth and creamy.

It requires no cooking or churning or much effort at all, really, and I love that about it when it’s super hot outside.

P.S. here are a few of my favorite fruit combos:

  • Dark sweet cherries + peaches
  • Mango + raspberries
  • Strawberries + pineapple

Description

Simple and delicious ‘nice’ cream made with just berries, bananas and coconut milk.

Ingredients

  • 2 cups frozen mixed berries
  • 1 medium frozen banana, peeled
  • ¼ cup canned coconut milk solids
  • 1 Tbsp. honey (optional)
  • Pinch kosher salt (optional)
  • Splash fresh lemon or lime juice (optional)

Instructions

  1. Place all ingredients in the bowl of a food processor and puree until smooth, scraping the sides of the bowl as needed.
  2. Transfer to a glass bowl fitted with a lid and place in the freezer for 30 minutes. Scoop and serve.

Notes

Cooking Tips: Store ‘nice’ cream up to 1 month in the freezer. Let sit at room temperature for a few minutes before scooping.

Substitution Tips: Try frozen peaches, mango or dark sweet cherries instead of berries.

      Hi Kate – I haven’t tried it but I’ve read to use frozen mangos instead! It sounds delicious with berries and will hopefully provide that creamy rich texture. 🙂

    Any suggestions for someone who doesn’t like bananas? I’m guessing that it would be hard to match their consistency and low calorie count. (Yes, I really wish I liked bananas, but I just can’t get there.)

      I use frozen zucchini chunks in my smoothies and it blends nice. You could give that a try. The berries and honey will make it sweet enough.

      I would try frozen mangos! They should give a creamy texture and go nicely with berries!

    For the “coconut milk solids”, do you use coconut cream rather than coconut milk, and just try to scoop out the top hardened layer and not use the liquid?

      You could use the canned coconut cream, but I just use the solid top of canned coconut milk. Either will work!

      I would try avocado, coconut milk and/or peanut butter as the base and add some frozen berries and spinach. You could also add chia or flax and protein powder, if you’d like!
