Cherry Crumble Bars
I don’t know about you, but I’m really enjoying sweet cherries in this summer. They’re sweet, juicy and such a treat. Especially because they are only fresh for a short period of time each year.
That’s why I made these amazing cherry crumble bars that feature sweet cherries, as well as a delightful lightly sweetened oat crust and crumble topping. I think you’re really going to love them.

Here’s how to make them:
- Start by prepping the oven and pan you’ll use to cook them. Preheat the oven to 350 degrees. Line an 8×8 baking dish with parchment paper. Coat with cooking spray. Set it aside while you make the crust/crumble and filling.
- In a large mixing bowl, combine the crust/crumble ingredients until thoroughly combined. Press half of the mixture into the prepared baking dish to form a crust. Set the remaining crumble to the side.
- In another large mixing bowl, stir together the cherries, maple syrup or honey, cornstarch and salt until thoroughly combined. Transfer the mixture to the baking dish and spread into an even layer over the crust. You can use frozen cherries if you’d like to make this during the off season or if that’s what you have on hand (make sure they’re pitted!).
- Evenly sprinkle the rest of the crumble mixture on top of the cherry filling. Use your fingers to lightly press the crumble into the cherry filling.
- Bake 30-35 minutes or until the filling is bubbly and the crumble is golden brown.
- Remove the bars from the oven and let the bars completely cool. Slice into 12 bars. Enjoy!

Crust/Crumble:
- 1 ½ cups oat flour (or whole wheat flour)
- 1 cup old-fashioned rolled oats
- ⅓ cup dark brown sugar
- 1 tablespoon maple syrup or honey
- ½ teaspoon ground cinnamon
- ¼ teaspoon baking soda
- ¼ teaspoon kosher or sea salt
- ¼ cup melted butter or coconut oil
- 1 ½ teaspoons vanilla extract
- ¼ teaspoon almond extract
Cherry Filling:
- 2 ½ cups pitted dark sweet cherries (fresh or frozen)
- 3 tablespoons maple syrup or honey
- 1 tablespoon cornstarch
- ¼ teaspoon kosher or sea salt
